BREADalert 9.30.15 | White Wheat Fermented Yeast (x4)

Summer travels have slowed down the bread testing considerably, and our sourdough starter is in need of some serious R&R.  While he recovers, we’ve got an old standard for ya – a fermented yeast white/wheat loaf.  Grab one!  Three are beautiful and one is the product of an experimental crust technique that…will not be repeated.  But its insides should be tasty!

LoafDrop Opportunities:

7:00 – 8:00 PM: Alamo Square/Hayes Valley/North Mission (or swing by my house)

Ingredients: Great River organic lily white bread flour, Rainbow bulk whole wheat flour, water, sea salt

Leavener: Store-bought yeast culture, fermented overnight

New or Different Techniques Applied: Spray bottle applied to one loaf as it was placed into oven.  Will not be repeated.

BREADalert 7.13.15 | White Wheat Sourdough (new starter!) (x2)

Our homegrown sourdough starter has leavened its first loaves!  And we’ve got a giant bag of fancy organic flour!  Breadtestr is on the road a lot these days, but we snuck into our subletted apartment to bring you these loaves.

Leavener: Breadtestr’s own homegrown sourdough culture

New or Different Techniques Applied: Using new starter, sea salt, and fancy organic flour

BREADalert 6.25.15 | Cheddar Garlic (x3)

The sourdough culture is almost healthy enough to get back to work, but we’re not there yet, so this dough uses an active dry yeast pre-ferment instead.

LoafDrop Opportunities:

Now – 2 PM: Hayes, Alamo Square, Mission, SoMa, Civic Center

Ingredients: Organic garlic, Tillamook Cheddar, King Arthur Bread Flour, O Organic Wheat Flour

Leavener: Fleischmann’s Active Dry Yeast (in a 12-hour pre-ferment)

New or Different Techniques Applied: Longer bulk rise, baking loaves straight out of the fridge, batard (longer) loaf form

BREADalert: 6.17.15 | Cinnamon Raisin (w/ good ol’ commercial yeast)

A well-meaning houseguest threw out our sourdough starter, so here at Breadtestr, we’re switching to commercial yeast preferments until our new culture is ready for its debut.
